Why Millennials Are Going Crazy For Pontoons

Millennials have it rough. Student debt is at an all-time high and owning a home is often beyond reach. Families are getting started later in life, and careers in 5-year-old industries are asking for 20 years of experience.

Chili Lime Baked Tilapia With Avocado Crema

Ingredients (for 2 servings)

TILAPIA

1 lb tilapia fillet (455 g)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon cayenne pepper

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon lime juice, about 1 lime

1 tablespoon olive oil

 

CREMA

  • 1 avocado
  • ½ cup fresh cilantro, roughly chopped (20 g)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lime juice, about 1 lime
  • ¼ cup yogurt (60 g)
  1. Preheat oven to 400˚F (200˚C).
  2. In a small bowl, mix the chili powder, cumin, cayenne, salt, pepper, and olive oil with the lime juice.
  3. Using a basting brush, generously coat each side of the tilapia fillet with the marinade.
  4. Bake fish for 12 minutes in a preheated oven until edges begin to crisp and fish is moist and flaky.
  5. While fish is baking, prepare the crema.
  6. In a blender, combine avocado, cilantro, salt, pepper, lime juice, and yogurt. Blend until mixture is smooth.
  7. Serve tilapia topped with avocado crema and freshly chopped cilantro.
  8. Enjoy!
